Way to Munch!
48My Husband lovingly calls me his "salad eating fool" because I love salads; always have, always will. I usually get on a kick and eat a particular kind for a while, before I tire of it, and move on to something new. This salad is something I currently eat a couple times a week and it really is delicious.
I take a big handful or two of baby mixed lettuce and top with a big handful or two of Mann's Broccoli Slaw. This is found in the produce section near the bagged salads. It has no dressing on it...just broccoli, red cabbage and carrots finely julienned. Then, I add a handful of pumpkin seeds - either raw or tahini roasted, maybe a bit of cheese - like mozzarella, if I am in the mood, and a handful of cherry tomatoes, if I have them. Finally, I sprinkle on black sesame seeds, lots of fresh, chopped cilantro and drizzle all with Annie's Shitake and Sesame Seed Dressing. I love the crunch - so yummy! You could definitely add red bell peppers, cucumbers, red onions to make it even more crunch-able. It's up to you.

Mann's broccoli slaw rocks! Unfortunately, we can't always get it here in our area. Your easy and crunchy salad sounds delicious, and everything in it is so good for you. Thumbs up.
Very crunchy, indeed. I'd have to substitute the shitake dressing. I'm so not a mushrrom eater, and I would imagine a dressing made of them would have a concentrated flavor. I like a berry viniagrette. But make my substitutions, and I think we have a winner!!! Great recipe!

Pumpkin seeds also have those omega 3 fatty acid oils that are good brain food too.
